Recipe // Gin & Tonic Cake

As a child I learnt an invaluable piece of wisdom from my mum which has seen me through to my thirties …. “when life gives you lemons, make a Gin & Tonic” and who was I to argue with that wise bit of parenting.

For period pains, heartbreaks, or just that the sun was out it was five o clock somewhere and a gin and tonic to be enjoyed.

So this mothers day I decided why not take these simple ingredients to a happy life and put it in a cake, so that’s what I’ve done, well the Gin anyway.

This is not a cake that is going to win any prizes for its beauty, however seeped in gin and with the zest of the lemon it tastes like a summers evening in a beer garden and there’s no need for ice.

Try it for yourself, here’s my recipe for my own “Mothers Ruin”

 

Cake:
4 eggs
200g butter
150g Maple Syrup
200g self-raising flour
2 lemons
200ml gin
Glaze:
Maple Syrup
Gin
Tonic water (optional)
Lemon
> Preheat the oven to 180 degrees C.
> Ensure all the ingredients are at room temperature.
> Cream together the butter and maple syrup
> Add the eggs and beat in.
> Sieve in the flour and mix until light and fluffy.
> Add the lemon zest and the juice of 2 lemons, add the gin and mix.
> Pour into a cake tin and place in the middle of the oven and bake for 45 minutes or until it passes the knife test.
> For the glaze, mix the ingredients together dependant on how sweet, boozy, zesty you want it to be. Prick holes in to the cake and pour over.
